In Sablé-sur-Sarthe, the town that gave the sablé its name, La Sablésienne makes the kind of French butter biscuit that turns a quick cup of tea into a proper pause.
The biscuiterie began in 1962, though the local sablé tradition reaches much further back. The 1670 Marquise de Sablé collection nods to the noblewoman associated with the biscuit’s early fame at the court of the Grand Condé. La Sablésienne keeps the history close without leaving the recipe stuck there: familiar butter shortbread appears in flavours from pure butter to tea and bergamot.
Amélie Loret Scherrer took over La Sablésienne in 2003. Today the house works with ingredients drawn mainly from western France and still bakes its biscuits on metal plates before picking them up by hand. That care is easy to appreciate in the small things: a scalloped edge, a generous butter note, a biscuit that belongs beside tea but rarely waits for it.
