Choose by flavour

Olive oils can taste mild and rounded, green and grassy, or peppery and bitter. Compare each bottle's tasting notes: a gentler oil can complement delicate ingredients, while a more assertive one brings character to bread, vegetables or beans. Flavoured oils are a separate choice; check their ingredients and use them when that added flavour suits your dish.

Cooking or finishing?

For dressings and a final drizzle, choose a flavour you enjoy on its own. For a simple pasta dinner, use an oil you enjoy as a light coating, then choose the shape and finishing cheese around it. Try Knolive Epicure Olive Oil, or compare Bodega Nekeas Arbequina. For cooking, follow the producer's suggested uses and avoid heating the oil until it smokes.
