These names describe different products. Read the label and product description rather than assuming every bottle is a traditional balsamic vinegar. White balsamic condiments and flavoured dressings can bring their own balance of sweetness, acidity and added ingredients.

Acetaia La Bonissima Sigillo Platino is a balsamic vinegar option for the table. Stefania Calugi's truffle-flavoured dressing with balsamic vinegar is a dressing in a spray format, intended to add a truffle-flavoured finishing accent. It is not the same product as pure balsamic vinegar.

Choose for your dish

For salad dressings, balance a small amount with olive oil and taste as you go. A concentrated finishing product may need only a few drops on roasted vegetables or cheese. Follow each producer's suggestions before using a bottle for cooking or reducing it in a sauce.
