Choose the filling before the sauce

Ricotta and Spinach Ravioli offers a cheese-and-greens choice. For a cheese-led plate, compare Four Cheese Tortelloni with Parmigiano Reggiano Mezzelune. They are different fillings and shapes, rather than interchangeable names for ravioli.
