A robust breakfast tea blending malty Assam, woody Ceylon, and fruity, spiced Darjeeling. Presented in 24 individually enveloped Cristal® sachets, it brews a brisk, full-flavoured cup made especially satisfying with a cloud of milk.

Tasting Notes of the Curator

Dammann Frères Breakfast is built with all the structure one expects from a proper morning tea, but its blend of three distinct origins gives it more nuance than simple strength. Assam forms the foundation, bringing a full-bodied, malty depth with warm notes reminiscent of toasted grain and dark honey. It gives the cup its richness and the reassuring weight needed to stand up beautifully to milk.

Ceylon contributes a drier, woodier character. Its briskness lifts the heavier malt notes and adds a clean, lightly tannic edge that keeps the tea alert and refreshing. Darjeeling then brings a finer layer of fruit and spice, adding a subtle aromatic brightness that prevents the blend from feeling flat or overly dense.

Together, these teas produce a bold and direct cup with a lively astringency and a satisfying finish. Served plain, its woody and spiced details are most apparent. Add a small amount of milk, and the sharper edges soften into a smoother, rounder brew while the Assam’s maltiness becomes even more pronounced.

This is tea designed for waking up properly: energetic, structured, and comforting without unnecessary embellishment. Each Cristal® sachet is individually enveloped to preserve the tea’s character and make it easy to prepare at breakfast, in the office, or anywhere the morning calls for something more substantial than polite leaf water.

Brewing and Pairing Suggestions

Steep one sachet in water heated to approximately 90°C for 4–5 minutes. Remove the sachet before serving. Enjoy it plain for a brisker, more aromatic cup, or add a small amount of milk to soften the tannins and highlight the blend’s malty richness. Sugar or honey may be added according to taste.

Its full-bodied character makes it a natural companion to both sweet and savoury breakfasts:

  • Eggs and breakfast meats: Serve with scrambled eggs, omelettes, bacon, sausages, or a full English-style breakfast.
  • Toast and preserves: Pair with buttered sourdough, brioche, marmalade, honey, or berry jam.
  • Pastries: Enjoy alongside croissants, pain au chocolat, scones, or buttery Danish pastries.
  • Porridge and grains: Its briskness balances creamy oatmeal, granola, and warm breakfast cereals.

Three Tea Gardens in One Cup

Breakfast tea is not defined by a single recipe. It is a style built around strength, briskness, and the ability to remain expressive when served with milk. Tea blenders often combine leaves from several regions to create a more complete cup, using one origin for body, another for brightness, and another for aromatic complexity.

In this blend, Assam, Ceylon, and Darjeeling each play a distinct role. Assam, grown in northeastern India, is celebrated for its deep maltiness and substantial body. Ceylon tea, from Sri Lanka, often brings a brighter, woodier profile and clean astringency. Darjeeling, cultivated in the Himalayan foothills, is prized for its more delicate fruit, floral, and spice-like character.

Dammann Frères brings the three together not to blur their identities, but to let their qualities support one another. The result is a breakfast tea with both muscle and manners: rich enough for milk, brisk enough to awaken the palate, and nuanced enough to reward a slower sip once the morning has stopped shouting.

Storage Instructions

Keep each tea bag sealed inside its individual envelope until ready to brew. Store the box in a cool, dry place away from direct sunlight, heat, humidity, and strongly scented foods or spices. Handle the sachets only with clean, dry hands.
