The idea for Copenhagen Sparkling Tea began not as a substitute, but as a sommelier's solution to flavour. In 2010, Jacob Kocemba was working in a Michelin-starred restaurant in Copenhagen when even a cellar of more than 1,700 wines could not provide the pairing he wanted for a dessert. He turned to carefully blended tea and discovered a new way to create depth, aroma, and structure at the table.

After years of trials, Kocemba joined Bo Sten Hansen to establish Copenhagen Sparkling Tea Company in 2017. Their approach treats each tea individually before blending, allowing delicate white tea, expressive Oolong, hibiscus, and other leaves to contribute their own character. LYSERØD captures that philosophy in a dry, pink, alcohol-free sparkling tea whose pleasure comes from its balance of fruit, tea, bubbles, and food-friendly restraint.

Serve well chilled, ideally around 5°C, in a flute. The producer states a shelf life of two years from production; refer to the best-before date and storage directions printed on the bottle.
