Casalba Morcilla Ibérica de Bellota is a dry-cured Spanish blood sausage crafted from select cuts of acorn-fed Ibérico pork. Seasoned with paprika and pepper, slowly dried over holm-oak embers, and naturally matured, it delivers extraordinary depth in every slice.

Tasting Notes of the Curator

This is not the soft, fresh morcilla typically destined for stews or the frying pan. Casalba’s Morcilla Ibérica de Bellota is a firm, dry-cured charcuterie made to be sliced thinly and enjoyed much like fine chorizo or salchichón.

Its flavor begins with the unmistakable depth of Ibérico pork. Casalba uses select acorn-fed cuts, including prized pieces such as secreto, presa, and aguja, which contribute richly marbled fat and a supple, lingering mouthfeel. Pork blood gives the morcilla its striking dark color and distinctive earthy, mineral character, while paprika and pepper provide warmth and gentle spice.

The sausage is enclosed in a natural casing before being dried with the embers of holm-oak wood. More than four months of natural curing allow its flavors to settle and deepen, adding restrained smokiness without overwhelming the sweetness of the pork.

The result is bold but beautifully composed: savory, smoky, gently spiced, and unexpectedly refined. Allow each slice to rest briefly outside the refrigerator before serving. As the Ibérico fat softens, the morcilla becomes silkier and considerably more aromatic.

Pairings and Suggestions

Casalba Morcilla Ibérica de Bellota is cured and ready to eat. Remove the casing if preferred, then slice thinly with a sharp knife.

For a Charcuterie Board: Serve with Manchego, Marcona almonds, cornichons, olives, and roasted piquillo peppers. With Bread: Place over warm country bread with a drizzle of extra virgin olive oil. With Something Sweet: Pair with quince paste, ripe figs, pear, roasted apple, or caramelized onion. With Potatoes: Serve alongside crisp potatoes, creamy potato purée, or a warm potato salad dressed with sherry vinegar. With Eggs: Add a few slices beside softly fried eggs or fold gently into a tortilla española. Wine Pairing: Choose Rioja, Ribera del Duero, Tempranillo, or a dry oloroso sherry.

It may also be warmed very briefly on toast or in a dry pan, but avoid prolonged cooking. Too much heat will render away the prized Ibérico fat and diminish the sausage’s smooth, luxurious texture.

Where Oak Smoke Meets the Dehesa

Casalba is a family producer based near the Sierra de la Demanda in northern Spain. Its charcuterie reflects both the pastoral traditions of Ibérico pork and the patient curing methods practised in the region.

The word bellota means “acorn” in Spanish. It refers to the acorn-rich finishing diet associated with qualifying Ibérico pigs during the montanera season, when they roam Spain’s oak-dotted dehesa landscapes. Their meat is celebrated for its marbling, aromatic sweetness, and fat that melts readily on the palate.

Casalba brings this prized pork into one of Spain’s most historic forms of preservation. In its morcilla, pork blood replaces the water commonly used in a chorizo-style seasoning mixture, creating the sausage’s deep color and characteristic savory intensity.

Natural casing, holm-oak embers, and more than four months of maturation complete the transformation. What began as a practical tradition of preserving every valuable part of the animal emerges as something strikingly elegant: dark, complex, and made for slow appreciation.

Storage Instructions

Keep refrigerated in its original packaging and follow the use-by date printed on the label. Once opened, wrap the remaining morcilla securely or place it in an airtight container and consume promptly.

Remove the desired portion approximately 15 to 20 minutes before serving to allow its aroma and texture to develop. Do not leave at room temperature for extended periods.
