This Sylvain Pataille Burgundy white is made with 100% Chardonnay grapes, harvested form five different parcels in Marsannay. The grapes are hand-harvested and gently pressed, fermented in old barrels, then aged in oak for 18 months. It’s rustic, with a full body, and an ABV of around 13%. On the nose, you get honeysuckle, orange peel, and dried pineapple. And on the palate, toasted vanilla, freshly baked pastry, and lemon zest. It has a long finish, with afternotes of roasted almonds and white peach.
Pair your Sylvain Pataille Marsannay Village Chardonnay with mild, soft cheeses and cured meats. It’s brilliant to enjoy with a plate of baked salmon, roast chicken, or a scampi pasta. It’s also great with shellfish, like mussels and clams.
Sylvain Pataille has a relationship with wine that spans his whole life. His was not a family of vignerons, but his childhood was spent amongst the vines. His father, a bus driver, spent some afternoons helping his vigneron friend, bringing along Sylvain and his brother, Laurent. And every summer, they would visit their paternal great uncle’s domain in the Médoc. Sylvain grew up around wine and vines, and he knew that winemaking would be his career.
He attended school in Beaune for winemaking, studying, training, and learning all he could to fully prepare himself for his dream. Barely out of school. He started his own domaine in Marsannay, a village in the CĂ´te de Nuits. He began in 1999 with only one hectare to his name, and steadily grew it to its current 15 hectares.
Aside from being a renowned vigneron, he is also consulting oenologist to some of the most illustrious domaines in the region. He has also become a leader in biodynamic and organic viticulture. All of his expertise has rendered him one of the most important figures in Burgundy.
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
