Made with Chardonnay grapes, the “Les Mechalots” by Sylvain Pataille is a white Burgundy wine that uses natural and sustainable winemaking. The grapes are harvested by hand, spontaneously fermented on whole bunches, and aged in barrels for 18 months.
It has a nice straw yellow color, and exudes aromas of jasmine and lime blossom, with fruity notes of mandarin and mineral salts, and hints of wood. It’s well-balanced on the palate, with a strong acidity, and a savory finish.
Pair the Sylvain Pataille, Bourgogne Blanc “Les Mechalots” is great to pair with starters, especially goat cheese. Enjoy it with shellfish, like steamed mussels, baked prawns, or lobster and crab. It also works well with light, tomato-based pastas, and salmon and tuna dishes.
Sylvain Pataille has a relationship with wine that spans his whole life. His was not a family of vignerons, but his childhood was spent amongst the vines. His father, a bus driver, spent some afternoons helping his vigneron friend, bringing along Sylvain and his brother, Laurent. And every summer, they would visit their paternal great uncle’s domain in the Médoc. Sylvain grew up around wine and vines, and he knew that winemaking would be his career.
He attended school in Beaune for winemaking, studying, training, and learning all he could to fully prepare himself for his dream. Barely out of school. He started his own domaine in Marsannay, a village in the CĂ´te de Nuits. He began in 1999 with only one hectare to his name, and steadily grew it to its current 15 hectares.
Aside from being a renowned vigneron, he is also consulting oenologist to some of the most illustrious domaines in the region. He has also become a leader in biodynamic and organic viticulture. All of his expertise has rendered him one of the most important figures in Burgundy.
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
