Its very large grains (3-4 mm) have a very thin membrane, therefore, they burst easily in the mouth, releasing a long finish with slightly buttery notes with rich and varied flavors. Its color varies from light gray to jet black.
To fully appreciate the subtleties of caviar, its tasting shall be done according to some ancestral rules. Originating from the Caspian Sea, the sturgeon species named Huso Huso has now moved to the Black Sea. Beluga is the largest of the sturgeon, it can measure up to 6 m, weigh up to 1000kg and live over 100 years. Its eggs are the largest–both fatty and creamy. Besides the rarity of this sturgeon, it takes over 20 years before a sturgeon can be fully mature to extract Beluga caviar from. Place in the coldest part of your fridge. Stored properly, this caviar will maintain its freshness for at most 3 months. Once the tin is opened, it is suggested to be consumed within 48 hours.
