A long, thin sausage, the Goikoa Chorizo Vela is made with carefully selected ingredients, and comes in two levels of heat. It’s tangy and salty, and is great in sandwiches or on its own.

TASTING NOTES FROM THE CURATOR

Vela means “candlestick,” and this refers to the long and thin shape this chorizo comes in. It’s made with minced pork and De La Vera paprika, and is dry-cured with stringent processes to achieve its quality flavor.

The Goikoa Chorizo Vela is firm and compact in consistency with a spiced aroma. We offer two variations—mild and spicy. Both have tangy and salty flavors, with noticeable notes of pimentón and garlic. It has a wonderful balance of meat and fat, adding to its juicy deliciousness.

PREPARATION AND PAIRINGS

Enjoy the Goikoa Chorizo Vela on its own, served with some cheeses. You can also use it in pastas, or in sandwiches. Try it with egg for breakfast sandwiches, or pair it with Havarti and pepper jack cheese in sourdough bread. Pair with a Cabernet Sauvignon or an Albariño.

WHAT ONCE WAS A LITTLE BUTCHER SHOP

Goikoa was founded by Eugenio Jimenez in 1929 as a small butcher’s shop in Sangüesa, in Navarre, Spain. Here, he produced his own cold cuts and cured meats, selling them around the neighborhood, where it gained good repute. In 1970, his son, Javier Jimenez Goikoa took over. It was Javier that dreamt beyond the little butcher shop, and became an entrepreneur in the meat sector. He was able to give Goikoa major development, establishing firm roots and progress.

It was in 1981 that it became a real company, transforming into Embutidos Goikoa S.A., and launching a commercial brand that has since seen steady growth. In 2005, they expanded to international exportation and expansion, introducing Goikoa to the global market. Today, Eugenio’s descendants keep his passion and dream alive, sharing it with the world.

Storage Instructions

This type of sausage may be stored for up to 6 weeks (if whole) in your pantry and indefinitely in the refrigerator (whole or in vacuum-packed slices). After opening, they should be used within 3 weeks.
