Vignoble du Rêveur’s Vibration is a dry Biodynamic wine from Alsace that is made with 100% Riesling grapes, fermented in large oak barrels and aged for a year on fine less. Fresh and bright, with a lovely acidity, it has an ABV of 13%. It is fragrant on the nose, with notes of green apple and lemon. On the palate, it’s vibrant, giving notes of honey, peach, and mango.
The Reveur Vibration is great with cured meats, or cheeses like aged Gouda and Gorgonzola, as well as sushi and sashimi. Enjoy it with vegetable dishes, rich fish like salmon and tuna, roast pork, and spicy food. For dessert, pair it with a citrusy treat, like a lemon meringue pie.
Mathieu Deiss grew up (and is still) part of Domaine Marcel Deiss, his father’s family domaine. And while he loves working on the vines and cellars of his family winery, he wanted something that was more of his own. In 2013, he and his partner, Emmanuelle Milan, decided to found Vignoble du Rêveur. He was left seven hectares by his uncle and grandfather, and in 2016, he took all that on, using his own know-how to create wines the way he wants. He decided to go back to the most traditional of methods—organic and biodynamic agriculture. Inspired by his maternal grandfather who fought for his own independence, Vignoble du Rêveur is Mathieu’s way of honoring that drive. Dreaming and building without limits, breaking rules, and loving the work.
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
