With a gorgeous salmon color, this rosé wine from Bodegas Protos is easy to drink, with a fresh and light feel.
The grapes are harvested mainly at night. That, combined with the rapid reception to avoid maceration with the skins gives it its full color, aroma, and flavor. Processed in a cold and inert atmosphere, and fermented in stainless steel, the Aire de Protos Rosé is aged with regular stirring for two to three months.
It’s a soft and delicate wine, giving off notes of watermelon, strawberry, peach, and citrus.
There are many ways to drink a rosé; one of our favorites is with salty, crumbly cheese. Try our Halloumi. Try a niçoise salad, or a gazpacho, too.
This Protos Aire also pairs wonderfully with light Asian dishes, like sushi, or Vietnamese spring rolls. If you want something a little heavier, how about some oil-based shellfish pasta? It will balance out the rosé’s sweetness beautifully.
Aire de Protos’ history begins in 1927, when 11 childhood friends came together as grown-ups of different professions to honor and celebrate the viticultural roots and traditions of their families, and their love for Peñafiel, their village.
Their dream was to make good quality wines, and to bring back recognition and memory to a forgotten wine region of rich heritage.
They succeeded, and more. These friends, and their families and descendants, changed the history of the region, and successfully produced wines of prominence. They’ve even introduced a now world-renowned Spanish appellation—Ribera del Duero. Bodegas Protos is now a community of over 250 families, and one of the most important wineries in the region.
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 5 to 7 days standing upright in the refrigerator.
