The Podere Le Ripi Canna Torta Bianco Toscana IGT is a fully Biodynamic wine, fermented and macerated for eight months in terracotta jars, then aged on grape skins for eight to 12 months in clay amphorae, then hand bottled. Light amber in color, with an ABV of 12%, this fresh and balanced wine has elegant aromas reminiscent of white wine, with notes of honey and herbs. It’s dry and richer on the palate, with notes of fresh fruits and honey.
Pair the Canna Torta Bianco Toscana IGT by Podere Le Ripi pairs very well with salads, cured meats, and soft cheeses. It’s also great with vegetable dishes like ratatouille, lean fish dishes, or tomato-based or pesto pastas.
Podere Le Ripi was founded in the late 1990s by Francesco Illy. Yes, of the Illy Espresso family. It had always been a dream of his to have something of his own, to create something beautiful and sustainable. This terroir had pool soil and inhospitable climate, incredibly unsuitable for farming, and thus, was left unpopulated for thousands of years. But what Francesco saw was centuries-old olive trees, diverse forests and lush flora, as well as a thriving wildlife. He saw potential.
Today Podere Le Ripi creates wines of quality, with utmost respect to its environment. Fueled by healthy and sustainable farming methods, it is a winery not only passionate about its wines, but its socially positive impacts.
Store unopened red wines in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 16 to 18°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
