Long and sleek, with a dark grayish-green body, this Fresh Sablefish from Canada is sashimi-grade. It has a pearly white flesh that becomes yellow-gold when smoked, and large, delicate flakes. Black Cod has a high fat content, giving it a velvety texture. It has a rich, sweet, buttery flavor, which is why it is also sometimes called “butterfish.”
This fatty fish lends itself beautifully to smoking, but it can also be used for sushi and sashimi. You can also enjoy Sablefish baked, poached, broiled, grilled in a grill basked, or pan-fried. Because of its buttery quality, you can also use it for dips, fillings, and mousses.
The Sablefish, or Black Cod has a diet of primarily other sea animals, such as jellyfish, pollock, and squid. It has a very long and very impressive lifespan, reaching to around 90 to 94 years. It is sometimes referred to as “butterfish” for its rich flesh. And the name “Sablefish” is thought to have come from the feel of its very small scales—almost velvety, akin to a sable’s fur.

For the best flavor and quality, fish should be prepared for eating the same day it is brought home, but it can be stored for two to three days in a refrigerator at a cool 4°C. You can store fish fillets in airtight bags in the freezer for up to a month. Cooked leftovers should be cooled and refrigerated as soon as possible and consumed within three days.
