Pro¬≠duced under the strict reg¬≠u¬≠la¬≠tions of the IGP, this Ace¬≠to Bal¬≠sam¬≠i¬≠co Di Mod¬≠e¬≠na IGP (Bal¬≠sam¬≠ic Vine¬≠gar of Mod¬≠e¬≠na IGP) is made with grapes from the Emil¬≠ia Romagna Region in Italy, aged in oak bar¬≠rels for 12 years. 

A faint aro¬≠ma of sweet and sour notes with under¬≠tones of oak and cooked must, the tex¬≠ture is smooth and runs like liq¬≠uid syrup. A medi¬≠um-bod¬≠ied bal¬≠sam¬≠ic, Fat¬≠to¬≠ria Estense Aged Bal¬≠sam¬≠ic Vine¬≠gar shows a com¬≠plex yet bal¬≠anced flavour with a yield¬≠ing acid¬≠i¬≠ty towards the finish.


Some¬≠what more acidic and thin com¬≠pared to Bal¬≠sam¬≠ics from Mod¬≠e¬≠na aged fur¬≠ther along, nonethe¬≠less Fat¬≠to¬≠ria Estense holds its place in a chef‚Äôs pantry as a Bal¬≠sam¬≠ic Vine¬≠gar of Mod¬≠e¬≠na due to its bal¬≠anced flavours and ver¬≠sa¬≠tile use. The ori¬≠gins of bal¬≠sam¬≠ic vine¬≠gar can be dat¬≠ed back to 1046, when a sil¬≠ver bot¬≠tle of bal¬≠sam¬≠ic vine¬≠gar made in Canos¬≠sa, a town in the province of Reg¬≠gio Emil¬≠ia, was gift¬≠ed by the Mar¬≠quis Boni¬≠fa¬≠cio to the soon-to-be Holy Roman Emper¬≠or Enri¬≠co III

To date, the meth¬≠ods of cre¬≠at¬≠ing authen¬≠tic bal¬≠sam¬≠ic remains. Made only with Tre¬≠bian¬≠no and Lam¬≠br¬≠us¬≠co grapes that pro¬≠vide the right bal¬≠ance of sweet¬≠ness and acid¬≠i¬≠ty, Bal¬≠sam¬≠ic Vine¬≠gars of Mod¬≠e¬≠na IGP are picked at its peak ripeness and cooked over open top vats and aged in oak bar¬≠rels or bat¬≠te¬≠rias, a set of pro¬≠gres¬≠sive¬≠ly of small¬≠er bar¬≠rels for a min¬≠i¬≠mum of 3 years. The fin¬≠ish¬≠ing result is a dark and vel¬≠vet smooth wine vine¬≠gar prized for its sweet acid¬≠i¬≠ty. Tru¬≠ly the black gold of Modena.
