TASTING NOTES OF THE CURATOR

Made from a secret family recipe, this Modena classic by Fattoria Estense is authentic and completely natural balsamic vinegar, made only through traditional fermentation processes and aged in wood barrels.

It has a distinct and complex aroma, indicative of its authentic and natural quality. Its color is full of warm light, and its taste sharp, and more acidic.

PREPARATIONS AND PAIRINGS

An incredible and versatile ingredient, the Fattoria Estense Balsamic Vinegar is great on fresh salads, or on cooked pickled vegetables. How about making a honey-balsamic glaze to drizzle over some pork tenderloin or pork chops?

  • After cooking the pork, mix the balsamic vinegar with honey, green onions, rosemary, garlic, some salt and pepper in the same pan. Bring to a boil.
  • Reduce the heat and let it simmer, uncovered, for 6-8 minutes, until thick.
  • Stir occasionally. When done, remove from heat and whisk in some butter until melted.
  • Drizzle onto your pork, and serve.

Storage Instructions

Balsamic Vinegar should be stored in a cool, dry, dark cupboard, away from the heat and light. Choose a spot in the kitchen that’s away from the oven. The best temperature for storing vinegar is from 13 to 21°C.
