The Singulier by Vignoble du Rêveur is a dry Biodynamic wine that is made with a blend of Riesling and Pinot Gris grapes, macerated for 10 days, fermented in large oak barrels, and aged on fine lees of one year. A harmonious and well-balanced wine, it has a deep orange gold hue to it, and aromas of apricots and white flowers. Full-bodied on the palate, it has notes of tangerine, apricot, and elderflower, with citrus notes.
The Reveur Singulier is great with cured meats to start. For your main dish, it complements spicy food well, as well as being a brilliant pairing for vegetable, pork, salmon, or tuna dishes. If you want to enjoy it with dessert, it goes great with citrusy treats.
Mathieu Deiss grew up (and is still) part of Domaine Marcel Deiss, his father’s family domaine. And while he loves working on the vines and cellars of his family winery, he wanted something that was more of his own. In 2013, he and his partner, Emmanuelle Milan, decided to found Vignoble du Rêveur. He was left seven hectares by his uncle and grandfather, and in 2016, he took all that on, using his own know-how to create wines the way he wants. He decided to go back to the most traditional of methods—organic and biodynamic agriculture. Inspired by his maternal grandfather who fought for his own independence, Vignoble du Rêveur is Mathieu’s way of honoring that drive. Dreaming and building without limits, breaking rules, and loving the work.
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
