The Secreto is a cut of meat that is hidden on the side of the famous Iberian pig‚Äôs neck, between the shoulder blade and the loin. It‚Äôs a thin cut, with a distinct intramuscular marbling of fat, and is the best cut on the Iberico pig‚ÄĒconsidered a delicacy in Spain! It‚Äôs the juiciest, most tender cut, with all the buttery, nutty goodness of authentic Iberico.

PREPARATION AND PAIRINGS

The Iberico Secreto by Estrella de Castilla is best prepared in the simplest of ways. Sprinkle with a bit of salt and pepper on both sides, and quickly sear over a griddle. That’s it! Slice into thin pieces before serving. Enjoy with a glass of Rioja or Ribera del Duoro.

Storage Instructions

Your cut of secreto comes frozen and vacuum packed. Store in freezer. Thaw only when about to cook. Cooked leftover meat can only be kept in the fridge for 3 to 4 more days. Consume immediately.
