TASTING NOTES FROM THE CURATOR

A monofloral honey from the Eucalypt tree found only in Western Australia, the Jarrah Honey from A Buzz from the Bees is a very potent honey, with an activity level of TA35+. This designation means Total Activity, and pertains to the anti-microbial qualities of honey in Western Australia, with a higher TA meaning that anti-microbial and anti-bacterial properties are stronger.

A Buzz from the Bees Jarrah Honey TA35+ is one of the healthiest in the world, and is thick, non-crystalizing, and has a semi dark amber color. Harvested sustainably and using no chemicals and pesticides, this Jarrah Honey is high in fructose, which makes it a great option for diabetics. It is rich and full-bodied, sweet, and smooth with delicate flavor.

PREPARATION AND PAIRINGS

Honey is very versatile. You can drizzle it over your pancakes, French toasts, and waffles. It’s also great to enjoy with your yogurt and oatmeal. Aside from breakfast, it’s also wonderful to serve with your charcuterie. A great way to enjoy it is layering Brie or Camembert cheese with a slice of pear or apple on top of crusty bread, and top with a small dollop of Jarrah Honey.

FOR THE BEES

A Buzz from the Bees was established in 2010 by Kim Cheeseman, an avid beekeeper. His beekeeping career truly began at eight years old, when he and his father found an abandoned beehive on a roadside. He helped his parents sell honey at the local market, and this kickstarted his vision to share the pristine harvest of honey they would get each year to the rest of the world.

A Buzz from the Bees is truly passionate about honey. Their mission is to bring all-natural, sustainably-produced products from Western Australia. They use no additives, no pesticides, no chemicals, or preservatives. Today, A Buzz from the Bees exports honey, honeycombs, and balms all over Australia, Asia, and the Middle East.

Storage Instructions

Keep your honey in a cool location away from direct sunlight and make sure the container is tightly sealed. The ideal temperature for storage is from 13 to 21°C. Some manufacturers will set the expiry date of their jars at two years after the bottling date. However, honey can last decades or even centuries if stored properly. It may change color and become crystalized, but it will stay safe to eat. If your honey does crystallize, just place the open jar in warm water and stir until the crystals dissolve. Store in a cool dry place.
