The most prominent taste from this salt is nutty hazelnut flavor. As compared to other salts, this Fine Red Salt from Terre Exotique is mellower and less salty in taste. It beautiful and characteristic brick red color obtained from a volcanic Hawaiian clay called alae, contains some 80 minerals and is said to be rich in iron oxide.
This salt serves as a finishing salt and goes well with fish, poultry and most especially, foie gras.
Fine Red Salt is a part of native Hawaiian cuisine and is used in traditional dishes such as kalua pig, poke, and pipikaula (Hawaiian jerky). It was also traditionally used to cleanse, purify and bless tools, canoes, homes and temples. Once exported to the Pacific Northwest to cure salmon, it saw a resurgence in popularity late in the 20th century in fusion style cuisine of Hawaii both on Islands and beyond. There has been a surge of Red Salt produced outside Hawaii. True Hawaiian-made alaea salt or fine red salt is often expensive due to the tedious and natural processes it goes to get it into every bottle.
