Fresh Le Jardin de Rabeleis Purple Tomatoes are small in size, a cross between cherry and heirloom tomatoes. It contains few seeds, making them easy to eat. With its deep purple skin, it is fleshy and fragrant, with insides that are dense, soft, and sweet.
PREPARATION AND PAIRINGS
Serve these purple tomatoes as aperitif. Just slice them, drizzle with a bit of olive oil, sprinkle on some salt, and finish off with some chopped basil, and you have an incredible starter. You can also try a different kind of appetizer.
- Make a mozzarella cream by putting chopped mozzarella and cream in a food processor, and mixing until smooth.
- Chop up your Fresh Le Jardin de Rabeleis Purple Tomatoes and toss them with chopped garlic, lemon zest, olive oil, and your choice of herbs (basil, thyme, oregano, etc.)
- Smear some mozzarella cream on focaccia bread (we suggest this delicious one by Baked by G), then layer some of your tomato salad on top.
- Drizzle with a little more olive oil and salt, and serve!
