This is where the eels spawn and their roe moved by the cur¬≠rents until they reach the mouths of Euro¬≠pean rivers in the form of baby eels. Tast­ing Notes from the Curator

The great¬≠est added val¬≠ue of the eel from Agro¬≠mar is that it is a legit¬≠i¬≠mate eel, not a sub¬≠sti¬≠tute such as the gulas. It is a very scarce prod¬≠uct and dif¬≠fi¬≠cult to get, but in the absence of fresh eels, they show their face. Agromar‚Äôs Angu¬≠las are pre¬≠sent¬≠ed in a del¬≠i¬≠cate and sim¬≠ple way. Cooked only in water and salt then comes the olive oil and chilli before canned. 


Angu¬≠las is eat¬≠en on its own as it is already packed with fla¬≠vor. For wine selec¬≠tion, the per¬≠fect pair¬≠ing part¬≠ner would be the Mar de Frades Albari¬≠no Atlanti¬≠co Rias Baixas 2019, a white wine that offers a fresh clean taste and is just as del¬≠i¬≠cate as the prized baby eels.

Angu¬≠las aren¬īt around all the time and aren¬īt some¬≠thing you just get right away. They are a del¬≠i¬≠ca¬≠cy and a rar¬≠i¬≠ty even in Spain. Angu¬≠las are caught in the win¬≠ter time in North¬≠ern Spain and are asso¬≠ci¬≠at¬≠ed with Christ¬≠mas time as a del¬≠i¬≠ca¬≠cy to be served for the spe¬≠cial occa¬≠sions of the season. 

Storage Instructions

Store tin in a cool, dark, and dry pantry. Unopened, it will last up to 2 years. Once opened, con¬≠sume your pre¬≠served fish/‚Äčmeat with¬≠in one or two days and keep left¬≠overs‚ÄČwith the oil‚ÄČin a sealed con¬≠tain¬≠er in the fridge.
