TASTING NOTES FROM THE CURATOR
Vinified from a blend of Pinot Meunier, Chardonnay, and Pinot Noir grapes, this rosé has a radiant pink color with glints of gold. This is a Champagne with dimension to it, unveiled in delicate layers. Its aroma reaches the nose subtly, then blooms into a fine bouquet of red berries and zesty citrus. In flavor, it is light and elegant, perfectly balanced as such, with a raspberry finish.
This Brut Rosé is an ideal dessert companion. Pierre Hermé, master of the French macaron, particularly likes this Champagne with a cake of lemon, strawberry, and olive oil. Citrusy desserts like tarte au citron or passionfruit and mango tartlets work amazingly well with it, as do desserts with berry-rich finishes. Try it with a brie and raspberry French toast or a light berry crêpe for an intimate breakfast or brunch for two.
ANCESTRAL VINIFICATION METHODS
In the two ancestral chais à foudre (aboveground cellars) of Billecart Salmon, you’ll find 24 large gigantic oak casks among hundreds of smaller ones. Each oak cask is chosen meticulously for the richness and aromatic complexity it will impart to the wines.
Combined with the use of low temperatures and stainless-steel tanks, the House’s process ensures an even quality in every vintage.
Fine sparkling wine must be handled with care. For short-term storage (a few days to a month), you can keep your bottle upright — but away from bright or artificial light. For long-term storage, especially for vintage cuvées, you must store the bottles on their side in a wine rack or cellar to keep the cork from drying out. The ideal temperature for storage is 7 to 10°C.
