The greatest added value of the eel from Agromar is that it is a legitimate eel, not a substitute such as the gulas. It is a very scarce product and difficult to get, but in the absence of fresh eels, they show their face. Agromar’s Angulas are presented in a delicate and simple way. Cooked only in water and salt then comes the olive oil and chilli before canned.
Angulas is eaten on its own as it is already packed with flavor. For wine selection, the perfect pairing partner would be the Mar de Frades Albarino Atlantico Rias Baixas 2019, a white wine that offers a fresh clean taste and is just as delicate as the prized baby eels.
Angulas aren´t around all the time and aren´t something you just get right away. They are a delicacy and a rarity even in Spain. Angulas are caught in the winter time in Northern Spain and are associated with Christmas time as a delicacy to be served for the special occasions of the season.
Store tin in a cool, dark, and dry pantry. Unopened, it will last up to 2 years. Once opened, consume your preserved fish/meat within one or two days and keep leftovers with the oil in a sealed container in the fridge.
