PREPA­RA­TION OR PAIRINGS

Tips from us ducks:

  • To enjoy your boutargue‚Äôs soft tex¬≠ture and iodine fla¬≠vor to the fullest, take it out of the refrig¬≠er¬≠a¬≠tor at least an hour before serving. 
  • To avoid crush¬≠ing the del¬≠i¬≠cate eggs, use a sharp, smooth-blad¬≠ed knife to cut your thin slices for serv¬≠ing. Just cut off the wax and the mem¬≠brane and enjoy!
  • If you plan on grat¬≠ing the boutar¬≠gue, remove the wax lay¬≠er a day or so before¬≠hand, to allow time for it to dry out.

FROM WATER POLO TO POISSON

Boutar¬≠gue Mem¬≠mi was cre¬≠at¬≠ed by for¬≠mer Tunis water polo cham¬≠pi¬≠on Elie Mem¬≠mi in the 1970s. He adored Mediter¬≠ranean cui¬≠sine, espe¬≠cial¬≠ly the boutar¬≠gue, and became deter¬≠mined to intro¬≠duce the French to this won¬≠der from the Mediter¬≠ranean. He invest¬≠ed all his sav¬≠ings in a small struc¬≠ture in Ivry-sur-Seine, a sub¬≠urb of Paris, where he trans¬≠formed mul¬≠let eggs into boutar¬≠gue. His fam¬≠i¬≠ly con¬≠tin¬≠ues his lega¬≠cy until today, becom¬≠ing a brand name known for excel¬≠lence all over Europe.

Store in fridge. Keep sealed in air¬≠tight con¬≠tain¬≠er or vac¬≠cum pack¬≠ag¬≠ing and store in fridge after open¬≠ing. Con¬≠sume with¬≠in a year.
