Memmi Yellow Boutargue 100g

A Mediterranean Caviar

Cov¬≠ered in pre¬≠serv¬≠ing bee‚Äôs wax after the Greek fash¬≠ion, this com¬≠pact¬≠ed mul¬≠let roe is often called the caviar of the Mediter¬≠ranean. Boutar¬≠gue Mem¬≠mi is known through¬≠out Europe as a pre¬≠mier sup¬≠pli¬≠er of this briny delicacy.

To call boutar¬≠gue Mediter¬≠ranean caviar is a sim¬≠pli¬≠fied descrip¬≠tion. The cur¬≠ing and salt¬≠ing process gives the mul¬≠let roe‚ÄČ‚ÄĒ‚ÄČcare¬≠ful¬≠ly extract¬≠ed with the sur¬≠round¬≠ing mem¬≠brane intact‚ÄČ‚ÄĒ‚ÄČa con¬≠cen¬≠trat¬≠ed fla¬≠vor, com¬≠bin¬≠ing brine with a soft, fine-grained tex¬≠ture that can be felt on your teeth. Boutarge Mem¬≠mi uses only the finest sea salt in their process, and the bee‚Äôs wax cov¬≠er¬≠ing is not just for preser¬≠va¬≠tion. It imparts a pleas¬≠ant, hon¬≠eyed fla¬≠vor that rounds out and com¬≠ple¬≠ments the taste of the roe.

As an appe¬≠tiz¬≠er, you can lay thin slices of boutar¬≠gue on a baguette or crack¬≠er with a bit of olive oil and lime juice. It pairs won¬≠der¬≠ful¬≠ly with green olives. If you love Greek food, this makes a love¬≠ly ver¬≠sion of tara¬≠masala¬≠ta to slather over your pita. Try it shaved or grat¬≠ed over a sim¬≠ple olive oil pas¬≠ta for a main course‚ÄČ‚ÄĒ‚ÄČfrom spaghet¬≠ti to tagli¬≠atelle. If you want some¬≠thing lighter, it ele¬≠vates a sim¬≠ple rock¬≠et sal¬≠ad with a touch of iodine fla¬≠vor. This is a del¬≠i¬≠ca¬≠cy you can break out the liquor for. Try it with vod¬≠ka, tequi¬≠la, per¬≠naud, or even fig liquor. Or you can make it a night to remem¬≠ber with a bot¬≠tle of Dom P√©rignon Vin¬≠tage 2008.

Tips from us ducks:

  • To enjoy your boutargue‚Äôs soft tex¬≠ture and iodine fla¬≠vor to the fullest, take it out of the refrig¬≠er¬≠a¬≠tor at least an hour before serving.
  • To avoid crush¬≠ing the del¬≠i¬≠cate eggs, use a sharp, smooth-blad¬≠ed knife to cut your thin slices for serv¬≠ing. Just cut off the wax and the mem¬≠brane and enjoy!
  • If you plan on grat¬≠ing the boutar¬≠gue, remove the wax lay¬≠er a day or so before¬≠hand, to allow time for it to dry out.

Boutar¬≠gue Mem¬≠mi was cre¬≠at¬≠ed by for¬≠mer Tunis water polo cham¬≠pi¬≠on Elie Mem¬≠mi in the 1970s. He adored Mediter¬≠ranean cui¬≠sine, espe¬≠cial¬≠ly the boutar¬≠gue, and became deter¬≠mined to intro¬≠duce the French to this won¬≠der from the Mediter¬≠ranean. He invest¬≠ed all his sav¬≠ings in a small struc¬≠ture in Ivry-sur-Seine, a sub¬≠urb of Paris, where he trans¬≠formed mul¬≠let eggs into boutar¬≠gue. His fam¬≠i¬≠ly con¬≠tin¬≠ues his lega¬≠cy until today, becom¬≠ing a brand name known for excel¬≠lence all over Europe.
