More concentrated that Greek yogurt, the Quescrem Culinary Yogurt is perfect for cooking and baking. It has a rich yogurt flavor, and a creamy texture. It can be whipped to your desired consistency and stability, has a high aeration capacity, a great balance of fat and protein, and good emulsifying capacity.
PREPARATION AND PAIRINGS
This yogurt is heat resistant, as it was specifically developed to be able to cook with. So, it’s great for sauces, both savory and sweet. You can also use it to make ice cream, cakes, mousses and foams. You can also make some delicious dips with it, like the classic tzatziki. Simply mix together grated (and drained) cucumber with Quescrem Culinary Yogurt, olive oil, chopped mint, lemon juice, minced garlic, and salt. Serve with tortilla chips, or with your falafels and souvlakis.
