The Pierres Sauvages Nature by Vignoble du Rêveur is a dry Biodynamic white blend of Pinot Blanc, Pinot Gris, and Pinot Noire grapes. They are fermented in stainless steel and foudres, and aged for nine months. Supple and precise, it has an ABV of roughly 14%. It’s clean on the nose, with notes of white flower, honey, and toasted nuts. On the palate, it gives notes of pear and apricot, with hints of citrus.
This wine pairs brilliantly with vegetable and fish dishes. The Reveur Pierres Sauvages Nature is great with a mushroom-based dish, some squash soup, or a nice prawn meal.
Mathieu Deiss grew up (and is still) part of Domaine Marcel Deiss, his father’s family domaine. And while he loves working on the vines and cellars of his family winery, he wanted something that was more of his own. In 2013, he and his partner, Emmanuelle Milan, decided to found Vignoble du Rêveur. He was left seven hectares by his uncle and grandfather, and in 2016, he took all that on, using his own know-how to create wines the way he wants. He decided to go back to the most traditional of methods—organic and biodynamic agriculture. Inspired by his maternal grandfather who fought for his own independence, Vignoble du Rêveur is Mathieu’s way of honoring that drive. Dreaming and building without limits, breaking rules, and loving the work.
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
