A Biodynamic white wine, the Arnaud Lambert Clos David is made with 100% Chenin Blanc grapes from 40-year-old vines. They’re matured for 24 months in aged foudres and barrels. It is fine, crisp, and discreet on the nose, with a complexity and depth. In contrast, it is long and intense on the palate, with lively citrus notes.
The Arnaud Lambert Clos David is wonderful paired with your cheese boards, especially with goat cheese, and other mild soft cheeses. Enjoy it with salads, scallops tartare, fried prawns, salmon or tuna dishes, and roast vegetables.
Yves Lambert created Domaine de Saint-Just at the age of 47, when he decided to return to his roots, to Saumur. That was 1996, and his son, Arnaud, joined him in 2005. But in 2011, Yves Lambert succumbed to a quick and aggressive cancer; it was a shock to everyone. So Arnaud took on the reins of the domaine himself, merging with the historic Saumur estate, Château de Brézé, in 2017. This merger resulted in Domaine Arnaud Lambert—new in name, but not in experience. They eventually adopted a biodynamic approach to their wines, creating greater understanding and providing more care and appreciation to their terroirs. The Lamberts were not born vignerons, and perhaps this is their advantage. Unencumbered of traditional restrictions, they are able to experiment and appreciate their work and their wines more freely.
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
