The Sauvignon Blanc grapes are minimally handled to retain the aromatics and flavors of the wine, then gently pressed to the tank, and cool-fermented with wild yeast. The wine is bottled early, this allows all the natural characteristics of the vineyard to be captured.
On the nose, it conveys delicate aromas of citrus blossom, grapefruit, melon, and lime zest. On the palate, it is ripe and balanced, with flavor notes of lemon, passionfruit, gooseberry, and green apple. It has a vibrant acidity, with a pleasing weight and long finish.
The perfect pairing for Allan Scott Scott Base Sauvignon Blanc? One word: seafood. It’s a golden combination. Enjoy it with our Akaroa Salmon, cooked with lemon butter garlic, or feta and herb-crusted, or even seared and served with salsa verde. It also works well with sushi, crab cakes, grilled garlic Parmesan-crusted scallops, or calamari.
If you’re not feeling seafood, it also pairs brilliantly with garlic chicken, spinach lasagna, and Vietnamese food, like a noodle salad.
Allan Scott and his wife, Cathy, settled in Marlborough in 1973, and he took a job with Montana to work in their new vineyards. He transferred to Corbans in 1980, where he eventually became their Senior Viticultural Manager, which gave his foray into winemaking steady foundation. Allan and Cathy purchased a piece of land in 1975, and initially used it for contract growing. Eventually, with the emergence of the first independent winemakers in Marlborough, they found the opportunity to be part of the new era of New Zealand wine.
Allan Scott Wines was launched in 1990, and was part of the first wave of independent winemakers. With 40 years of experience, Allan himself is a totem in Marlborough wines, and with the winery over 30 years old, they keep evolving and spearheading trends, and keeping up with the ever-changing demands of the market.
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
