The Casa Rinaldi Il Nero is a young balsamic vinegar, aged for no more than two years, and uses a different concentration of grape must, which determines the vinegar’s sweetness. Hailing authentically from Modena, Italy, with an IGP certification, it gives a dark brown color, and an intense and fragrant aroma with notes of balsamic and spice. On the palate, it’s a well-balanced flavor, sweet, but with a very subtle tartness.
The Casa Rinaldi Balsamic Vinegar of Modena IGP – Il Nero can be used as a seasoning for meats and fish. It’s also classically used as a dressing for salads. It can also be drizzled onto cheese, fruits like strawberries and peaches, and even over ice cream!
Casa Rinaldi as a company was birthed from a passion for Traditional Balsamic Vinegar, for which Modena is known. Its name is taken from the 1888 building owned by the Rinaldi family, which served as a vinegar factory. The building stands to this day, and is both an active component, being used in the company’s production, and a metaphorical marker—a reminder of tradition and quality.
Balsamic vinegar should be stored in a cool, dry, dark cupboard, away from the heat and light. Choose a spot in the kitchen that’s away from the oven. The best temperature for storing vinegar is from 13 to 21°C.
