Cured for at least 36 months, this pata negra (named for the pigs‚Äô char¬≠ac¬≠ter¬≠is¬≠tic black hooves) exhibits an intense bright col¬≠or, with white streaks run¬≠ning through. On the nose, it gives a per¬≠sis¬≠tent aro¬≠ma with hints of nuts and fields. Its taste is del¬≠i¬≠cate, though, exud¬≠ing a beau¬≠ti¬≠ful gen¬≠tle¬≠ness and a pleas¬≠ant after¬≠taste.
