Typical product of Catalonia, the longaniza de payés is a sausage made with lean pork meat minced and marinated with pepper and other spices, thus preserving the most typical Catalan artisanal delicacy.
Serve your longaniza thinly sliced and eat as is. This works well with dry and medium-bodied reds, like Sangiovese.
