This pre­mi­um grade jamón de Teru­el from Aire Sano, made from the famed large white pigs breeds of the Teru­el region of west­ern Spain. We offer vac­u­um-packed slices.


This pro¬≠tect¬≠ed ham comes from free-rang¬≠ing pigs that are fed on a spe¬≠cial diet of at least 50 per¬≠cent cere¬≠al grains grown and har¬≠vest¬≠ed in Teru¬≠el. The pigs them¬≠selves are a blend of Large White and Lan¬≠drace pigs on the mater¬≠nal side and Duroc pigs on the pater¬≠nal side. They are cured for at least 12 months with no addi¬≠tives oth¬≠er than salt. A tru¬≠ly good jam√≥n de Teru¬≠el has vis¬≠i¬≠ble lay¬≠ers of fat between the mus¬≠cles folds and has a del¬≠i¬≠cate fla¬≠vor with min¬≠i¬≠mal saltiness. 


Served in thin slices, this ham makes a love¬≠ly con¬≠trast to the more intense jam√≥n ib√©ri¬≠co. It goes with a vari¬≠ety of cheeses, from sheep‚Äôs and goat‚Äôs milk cheeses to sharp Bajor¬≠agon and semi-hard cheeses like Mah√≥n-Menor¬≠ca‚ÄČ‚ÄĒ‚ÄČor even milder soft cheeses like Brie. 

Enjoy this ham with cava, par¬≠tic¬≠u¬≠lar¬≠ly whites and ros√© from the Pas¬≠tor region. We like it with our Bohi¬≠gas Brut Reser¬≠va Cava. Wine is a sta¬≠ple all over Spain, and Rio¬≠ja Cri¬≠an¬≠zas pair very well with this ham. If you pre¬≠fer beers, a light lager will bring out the sub¬≠tle fla¬≠vors of the jam√≥n de Teru¬≠el for sure!


The farms of Aire Sano mon¬≠i¬≠tor the entire live¬≠stock process, from genet¬≠ic selec¬≠tion to rais¬≠ing and fat¬≠ten¬≠ing each indi¬≠vid¬≠ual pig. They fol¬≠low the strictest pro¬≠to¬≠cols set by the reg¬≠u¬≠la¬≠to¬≠ry board for the Cer¬≠ti¬≠fi¬≠ca¬≠tion of Ori¬≠gin Hams and Shoul¬≠ders of Teru¬≠el. They feed their pigs the grains of their own fields and fac¬≠to¬≠ries, care¬≠ful to use only noble grains to ensure the high¬≠est nutri¬≠tion¬≠al val¬≠ue for their ani¬≠mals. Storage Instructions

To prop¬≠er¬≠ly con¬≠serve and extend the ham‚Äôs shelf life, store in a cool, dry place, with the ide¬≠al serv¬≠ing tem¬≠per¬≠a¬≠ture between 17‚ÄČ‚Äď‚ÄČ22¬ļ C. Vac¬≠u¬≠um-sealed packs of hand-carved cured meats can last up to five months in the refrig¬≠er¬≠a¬≠tor (nev¬≠er the freez¬≠er). Once the pack is opened, they‚Äôre best enjoyed with¬≠in the day.
