About

soft cheese

How to choose

Soft describes the texture inside the cheese. It does not tell you whether the rind is bloomy or washed, or whether the milk was raw or pasteurized. A Brie and a Livarot can both be soft while offering quite different flavours.

For a board, compare Brie or Camembert with a washed-rind choice such as Livarot or Plancherin d'Arêches. Select the portion size for your table and use the product description to judge the character you want. Texture can become more yielding as a cheese ripens.
