The original and classic Tarbouriech oyster, made in the depths of the gorgeous Thau Lagoon. Bouzigues oyster sizes are defined as N4 being the smallest and N1 being the biggest.

NOTES FROM THE CURATOR

These oysters are the first kinds Maison Tarbouriech grew and farmed, and they have completely perfected the longstanding tradition of oyster-farming. This is their classic and original selection, making use of time-proven methods passed down from generations of Marseillan families.

The Tarbouriech Bouzigues is a nutty oyster, with a well-serrated and beautiful marbled shell. Though not made with the use of The Solar Tide, these shellfish are incredibly supple and succulent, and will melt in your mouth.

It has an undeniable and recognizable freshness, beautiful iodization, and with a wonderful but subtle hazelnut flavor.

Popular choice for this type of oyster is N3 Box of 48 (with a size neither too big nor too small) and perfect for sharing for a dinner of 5-6.

If you’re having a party, bigger portions are available with N2 Box of 128 being a good choice to serve.

PAIRINGS AND PREPARATION

Tarbouriech Bouzigues are best enjoyed on their own at its freshest state, with only a squeeze of lemon.

If you’re looking to celebrate, pop a bottle of our recommended celebratory sparkling wine that is Bohigas Brut Reserva Cava. This cava will harmonize the acidity and saltiness of the Bouzigues and give you a slight hint of sugar on the tongue.

BLUE LAGOON

The Thau Lagoon in Marseillan has a longstanding culture of oyster farming. It has exceptional richness, balancing between fresh water, and the vast Mediterranean Sea. The sunshine and beautiful climate of the South of France make the waters abundant in phytoplankton, thus making Thau Lagoon important to marine bio life, nourishing both shellfish and fish.

All of these conditions make Tarbouriech Bouzigues oysters extraordinarily full-flavored and delicious.

Storage Instructions

Store your box of fresh, unshucked oysters in your fridge, keeping the temperature between 0 to 5°C. Keep them covered with a damp cloth, flat side up, to increase shelf-life. To enjoy them at their freshest, please consume them within 48 hours.

When you’re ready to shuck your oysters, take a sharp knife (a vegetable knife or, ideally, an oyster shucking knife) and hold the oyster, round-side down and pointed side facing you, between a tea towel. Wiggle the knife into the pointy end and twist it until the shell comes open.
