The original, the classic

The orig­i­nal and clas­sic Tar­bouriech oys­ter, made in the depths of the gor­geous Thau Lagoon. Bouzigues oys­ter sizes are defined as N4 being the small­est and N1 being the biggest. 

NOTES FROM THE CURATOR

These oys­ters are the first kinds Mai­son Tar­bouriech grew and farmed, and they have com­plete­ly per­fect­ed the long­stand­ing tra­di­tion of oys­ter-farm­ing. This is their clas­sic and orig­i­nal selec­tion, mak­ing use of time-proven meth­ods passed down from gen­er­a­tions of Mar­seil­lan families.

The Tar­bouriech Bouzigues is a nut­ty oys­ter, with a well-ser­rat­ed and beau­ti­ful mar­bled shell. Though not made with the use of The Solar Tide, these shell­fish are incred­i­bly sup­ple and suc­cu­lent, and will melt in your mouth.

It has an unde­ni­able and rec­og­niz­able fresh­ness, beau­ti­ful iodiza­tion, and with a won­der­ful but sub­tle hazel­nut flavor.

Pop­u­lar choice for this type of oys­ter is N3 Box of 48 (with a size nei­ther too big nor too small) and per­fect for shar­ing for a din­ner of 5 – 6.

If you’re hav­ing a par­ty, big­ger por­tions are avail­able with N2 Box of 128 being a good choice to serve.

PAIR­INGS AND PREPARATION

Tar­bouriech Bouzigues are best enjoyed on their own at its fresh­est state, with only a squeeze of lemon. 

If you’re look­ing to cel­e­brate, pop a bot­tle of our rec­om­mend­ed cel­e­bra­to­ry sparkling wine that is Bohi­gas Brut Reser­va Cava. This cava will har­mo­nize the acid­i­ty and salti­ness of the Bouzigues and give you a slight hint of sug­ar on the tongue.

The Thau Lagoon in Mar­seil­lan has a long­stand­ing cul­ture of oys­ter farm­ing. It has excep­tion­al rich­ness, bal­anc­ing between fresh water, and the vast Mediter­ranean Sea. The sun­shine and beau­ti­ful cli­mate of the South of France make the waters abun­dant in phy­to­plank­ton, thus mak­ing Thau Lagoon impor­tant to marine bio life, nour­ish­ing both shell­fish and fish.

All of these con­di­tions make Tar­bouriech Bouzigues oys­ters extra­or­di­nar­i­ly full-fla­vored and delicious.

Storage Instructions

Store your box of fresh, unshucked oys­ters in your fridge, keep­ing the tem­per­a­ture between 0 to 5°C. Keep them cov­ered with a damp cloth, flat side up, to increase shelf-life. To enjoy them at their fresh­est, please con­sume them with­in 48 hours.

When you’re ready to shuck your oys­ters, take a sharp knife (a veg­etable knife or, ide­al­ly, an oys­ter shuck­ing knife) and hold the oys­ter, round-side down and point­ed side fac­ing you, between a tea tow­el. Wig­gle the knife into the pointy end and twist it until the shell comes open.
