Castelvetrano Olives originated in Sicily, in the province of Tapani. It has a PDO, or a Protected Designation of Origin, and is also known as Nocellara de Belice. The Madama Oliva Green Castelvetrano Olives exude a beautifully bright straw green color, and are very fleshy and meaty, with a crisp texture. They’re buttery and sweet, and absolutely delicious.
Madama Oliva Green Castelvetrano Olives are great for snacking. Use them in your homemade pizzas and in your charcuteries. They’re also popularly used in salads, and vegetable and fish dishes. Use them to make your tapenades, or eat it with some good sheep’s cheese. Pair with a crisp white wine, like a Sauvignon Blanc. You can also use Castelvetrano Olives in dirty martinis.
It was in a small village just east of Rome that the Mancini family began their olive business. It was not an unusual venture, as the village of Castel Madama had a number of families selling black table olives. But the Mancinis sought to combine tradition with the ever-growing technological advancements, and thus, set themselves apart. It was in 1989 that the brand Madama Oliva was born, as a merger between Mancini and other olive producers in the area, and became not only a leading name in freshly packed olives, but also became the first export company in Italy to Japan and the United States.
