The Lafitte Half-Cooked Whole Foie Gras is smooth, soft, and silky in texture, with an incomparable melt-in-your-mouth quality characteristic of foie gras. It has classic foie gras flavor—slightly salty and completely sublime.

Lafitte uses no additives, no preservatives, and no alcohol. It’s made with ducks that are fattened with whole, non-GMO corn kernels. It consists literally of just duck foie gras, salt, spices, and pepper, then half-cooked under vacuum, making it perfect for cooking.

PREPARATION AND PAIRINGS

The Lafitte Half-Cooked Whole Foie Gras comes in a terrine, making it easy to slice and serve. You can enjoy this foie gras as is, spread on bread, and served with sweet jams and marmalades—the sweetness of the jams complements the duck foie gras flavor beautifully. This foie gras is also great pan-seared, served with some caramelized figs, and arugula.

Foie gras pairs well with a number of wines. Enjoy it with a glass of white wine, like Jurançon or a Sauternes, or a St. Emillion Bordeaux if you prefer red.

EXCELLENCE AND AUTHENTICITY

Pierre Lafitte founded his eponymous company in 1920, in the picturesque village of Montaut à Chalosse in Landes, in the south west region of France. It originally sold game, specializing in hares, partridges, ortolans, etc., as well as selling foie gras to traditional restaurants in the area. When he passed, his son Leon took over with his wife, Solange, and developed the business to new heights. In 1970, Lafitte found growth not only in France, but internationally, as well.

Lafitte has been a family business for four generations now, and has found a following amongst prestigious clientele—from restauranteurs, delicatessens, and retailers, and having their own stores across France. Their name is tantamount with excellence, quality, and authenticity, and is known to offer the best duck foie gras in the region.

Storage Instructions

Unopened cases of foie gras can be kept in the pantry for up to 4 years at a temperature of 10 to 15°C. Once you open the case, transfer the foie gras into an airtight glass container and it will keep in the fridge for up to 3 days. Bring it to room temperature before serving.
