TASTING NOTES FROM THE CURATOR

These lentils are hailed as the best in the world, with good reason. Recognized by chefs the world over, the Sabarot Green Lentils are grown in the volcanic soil of the Velay, and have been grown in the region for 2000 years.

These lentils, also called French green lentils are small in size, with a dark green color marbled with steel blue. They have a unique peppery flavor and a refined taste.

PREPARATION AND PAIRINGS

French green lentils hold their shape very well in cooking, so you don’t have to worry about them becoming mush. They’re great for warm lentil salads, perhaps with roast baby carrots and red onions. It will also go with a quinoa, kale, and eggplant salad. Use it for hearty lentil soups and stews. Put them in your chili con carnes and your pasta sauces.

LEGUMES ARE GOOD FOR YOU

Lentils are great for people leaning more into a plant-based diet, as it’s a great source of protein and iron. It’s also packed with B vitamins, magnesium, zinc, and potassium. Storage Instructions

Store your unopened lentils (once opened, transfer them into an airtight container) in a cool, dry place, like the pantry or a cupboard. They will keep for 1 year. Once cooked, cover and refrigerate within two hours of cooking. Cooked lentils will last 5-7 days in the refrigerator, and 6 months in the freezer.
