Called “noisettes” in France, these fresh hazelnuts take on the shape of flattish hearts. The shell’s color ranges from a warm brown, to a mahogany red. They’re smallish nuts, with a pretty firm ivory flesh, but the flavor is highly concentrated. Sweet and aromatic, with delicate woody notes, its taste will remind you vaguely of brown sugar.
