Mons Apéricheese may be small in size, but it carries the expressive character and craftsmanship expected from Maison Mons. Made primarily from 100% goat’s milk — with occasional seasonal touches of cow’s milk depending on production — this cheese delivers the fresh lactic brightness and gentle tang that define refined French chèvre.

The texture and flavor evolve naturally depending on its stage of maturation. Younger Apéricheese will feel creamier, milder, and more yogurt-like, while more mature pieces develop firmer textures, deeper earthy notes, and a more pronounced goat cheese character. As it continues aging, the rind naturally evolves and may develop white, grey, blue, or light green surface molds — a completely normal and expected part of traditional artisan goat cheese maturation.
