TASTÂING NOTES FROM THE CURATOR
The pride of the SlavÂic kitchen, bliÂnÂis are traÂdiÂtionÂalÂly made from wheat or buckÂwheat flour and leavÂened with yeast. They are slightÂly thickÂer than French crepes, and have a savoriÂness to them rather than sweetÂness, which make them the ideÂal vesÂsels for all sorts of topÂpings othÂer foodstuffs.

TraÂdiÂtionÂalÂly, you have bliÂnÂis with sour cream and smoked salmon. Our selecÂtion of Dom Petroff Smoked Salmon is an excelÂlent place to start when you conÂsidÂer a light bliÂni-based meal. Of course, straight out of RussÂian traÂdiÂtion, caviar is an excelÂlent way to go too. But bliÂnÂis have no truÂly desÂigÂnatÂed topÂpings. FROM A HAPÂPY ACCIÂDENT, A THOUÂSAND YEARS AGO
AccordÂing to RussÂian lore, a wanÂderÂer overÂcooked his breakÂfast oats into a thin solÂid disc in a pan and creÂatÂed what could be conÂsidÂered the very first panÂcake. Because of their round shape, these round capes that came to be called bliÂnÂis were incorÂpoÂratÂed into the SlavÂic fesÂtivÂiÂties at MaslenÂitÂsa, a day to worÂship the sun. More modÂern traÂdiÂtions took over and bliÂnÂis have become the cenÂtral part of what is affecÂtionÂateÂly called butÂter week, a promise of new beginÂnings at the end of winÂter. Of course, you can have them any othÂer time of year now, too.
Storage Instructions
Your bliÂnÂis can be stored frozen for up to a month from the date you receive it. Defrost them in the refrigÂerÂaÂtor the night before you plan to use them. AlterÂnaÂtiveÂly, you can leave them out on the counter to defrost for no more than 3 hours. To reheat the bliÂnÂis, place them in the oven at 170°C (drop to 150°C if your oven heats doesnât mainÂtain a conÂstant temÂperÂaÂture) for 7 to 10 minÂutes. AlterÂnaÂtiveÂly, you may also pop these in the microwave for 30 secÂonds to 1 minute.
