The Jean Paul & Benoit Droin Chablis Vaillons 1er cru is made with 100% Chardonnay grapes, fermented partly in stainless steel vats, and partly in barrels. It’s a blend of five terroirs found across the Vaillons premier cru. Fresh and bright, this is a classical wine, with notes of white flower, white pepper, quinine, and iodine on the nose. On the palate, it’s plump and round, with notes of grapefruit, lemon, and honey. This Chablis Vaillons 1er cru is a fantastic, beautifully constructed wine.

Jean-Paul and Benoit Droin are a father and son duo that hails from a long line of vignerons, reaching as far back as 1620. It was Jean-Paul that put their domaine on the map, and Benoit is touted on of the most dynamic winemakers of the region. Benoit, a 14th-generation Droin, handles most things on the estate now. He runs a sophisticated operation, with each wine receiving treatment more suited to its terroir. Domaine Droin has 13 hectares of vineyard, producing seven Premier Crus, five Grand Crus, Petit Chablis, and Chablis wines. Their wines are rich and full-bodied, but retaining a steeliness and a purity characteristic of classic Chablis.
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
