Tasting Notes from the Curator
Montaraz jamon contains no nitrates, nitrites, or anything else — just jamon, sea salt, and time. The Black Iberian Pigs or the Pata Negra from which the jamon comes from is pasture-raised and purely fed grain and acorn. The result is a Jamon that is smooth and complex in taste, and less salty. Cured for 36+months.
Bold wines of Ribeira del Duero, Toro and Rioja compliment the dark flavorful Iberico ham perfectly. The combination creates flavors that can warm your soul. You can pair this fine jamon with Protos Roble Ribera Duero 2018 or Protos Crianza.
