Tast­ing Notes from the Curator

Mon­taraz jamon con­tains no nitrates, nitrites, or any­thing else — just jamon, sea salt, and time. The Black Iber­ian Pigs or the Pata Negra from which the jamon comes from is pas­ture-raised and pure­ly fed grain and acorn. The result is a Jamon that is smooth and com­plex in taste, and less salty. Cured for 36+months.

Bold wines of Ribeira del Duero, Toro and Rio­ja com­pli­ment the dark fla­vor­ful Iberi­co ham per­fect­ly. The com­bi­na­tion cre­ates fla­vors that can warm your soul. You can pair this fine jamon with Pro­tos Roble Rib­era Duero 2018 or Pro­tos Crianza.
