The Pintom Subversivo Rosé by Canopus Wines is a lively salmon color, reflecting the vibrancy of the wine itself. It’s made with Pinot Noir grapes that are organically grown in Valle de Uco in El Cepillo, Argentina, and aged in ceramic spheres, amphoras, and used French oak barrels. This Argentinian rosé has gentle floral aromas, with notes of white cherry. On the palate, you get lovely notes of strawberry sorbet.
A light and fresh rosé, pair your Canopus Pintom Subversivo Rosé with tapas or salads to start. It’s great with grilled chicken or grilled pork, as well. Rosé lends itself well with spicy foods, like Indian curries, or Thai dishes.
Canopus’ vineyard is situated in a peaceful setting in Valle de Uco, in El Cepillo, Argentina, with views of the snow-capped Andes. Calcareous soils, intense temperatures, and irregular winds define the region. Canopus pays special attention to the various complexities and nuances of the terroir in their 10 hectares of vineyards with the express objective of giving their wines their distinct and natural character.
Their vineyard is certified organic, and they use biodynamic procedures to preserve each wine’s native state with minimal interference. The wines are left to their own devices in the cellar, with no adjustments or interventions.
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 5 to 7 days standing upright in the refrigerator.
