Pro¬≠nounced as oh-rehk-kye¬≠ht-teh, orechi¬≠ette direct¬≠ly trans¬≠lates to ‚Äč‚Äúlit¬≠tle ears‚ÄĚ in Ital¬≠ian, due to its dain¬≠ty, ear-like shape. Although orig¬≠i¬≠nat¬≠ing in Puglia and Basil¬≠i¬≠ca¬≠ta in South¬≠ern Italy, this par¬≠tic¬≠u¬≠lar Orrechi¬≠ette is pro¬≠duced in Grag¬≠nano in South Italy. Known as Italy‚Äôs City of Pas¬≠ta, Grag¬≠nano pro¬≠duces one of the best dried pas¬≠ta in the world.

TAST­ING NOTES FROM THE CURATOR

Pop¬≠u¬≠lar since the 13th cen¬≠tu¬≠ry, orechi¬≠ette has a thin¬≠ner dome cen¬≠ter that curves into thick¬≠er rims, giv¬≠ing it a unique¬≠ly soft cen¬≠ter and chewier tex¬≠ture around the edges. Made with 100% durum wheat semoli¬≠na and fresh spring water from Grag¬≠nano, Antiche Orrechi¬≠ette di Grag¬≠nano suc¬≠ceeds in cre¬≠at¬≠ing an organ¬≠ic pas¬≠ta with a firm, al-dente bite and sig¬≠na¬≠ture rough¬≠ness that hearti¬≠ly holds pas¬≠ta sauces of any kind. 

PREPA­RA­TION

A ver¬≠sa¬≠tile pas¬≠ta, this small, dim¬≠pled noo¬≠dle cra¬≠dles small veg¬≠eta¬≠bles or thick, chunky sauces well due to its unique shape. But a pas¬≠ta as rich in his¬≠to¬≠ry as orec¬≠chi¬≠ette has a home¬≠town in Italy, the place where it was invent¬≠ed, pre¬≠pared with ingre¬≠di¬≠ents that grew abun¬≠dant in the area. 

In the case of orec¬≠chi¬≠ette, its sto¬≠ry belongs to the city of Puglia, known also as the largest pro¬≠duc¬≠ers of olive oil in Italy. Tra¬≠di¬≠tion¬≠al¬≠ly served with broc¬≠coli rabe, boil the pas¬≠ta for 8 to 10 min¬≠utes until al dente, toss with sauteed broc¬≠coli rabe (or bro¬≠colli¬≠ni if broc¬≠coli rabe is not avail¬≠able), and gar¬≠nish with a gen¬≠er¬≠ous driz¬≠zle of extra vir¬≠gin olive oil, pep¬≠per, and parmi¬≠giano reggiano.

The Birth¬≠place of Dried Pasta

Just south of Naples lies a hill¬≠top town known for pro¬≠duc¬≠ing the best dried pas¬≠ta in the world. Lov¬≠ing¬≠ly referred by the locals as Oro di Grag¬≠nano‚ÄČ‚ÄĒ‚ÄČthe gold of Grag¬≠nano‚ÄČ‚ÄĒ‚ÄČthis lit¬≠tle town is cel¬≠e¬≠brat¬≠ed for its air-dried, bronze-extrud¬≠ed pasta.

Rec¬≠og¬≠nized by the Euro¬≠pean Union as a PGI prod¬≠uct (‚ÄúPro¬≠tect¬≠ed Geo¬≠graph¬≠i¬≠cal Indi¬≠ca¬≠tion‚ÄĚ), Pas¬≠ta di Grag¬≠nano ensures a strict stan¬≠dard of qual¬≠i¬≠ty. Made with only high qual¬≠i¬≠ty durum wheat, fresh spring water sourced from the near¬≠by Mount Lat¬≠tari and extrud¬≠ed through a bronze dye, pas¬≠tas made in Grag¬≠nano pro¬≠duce an amaz¬≠ing¬≠ly al-dente bite and a sig¬≠na¬≠ture rough¬≠ness that clings beau¬≠ti¬≠ful¬≠ly to any pas¬≠ta sauces. Today, only 16 pas¬≠ta pro¬≠duc¬≠ers are rec¬≠og¬≠nized for true Pas¬≠ta di Grag¬≠nano, one of which is Antiche Tradizioni di Gragnano.
