Tasting notes of the curator
With its pearly grey colour, intense flavour and creamy texture, the Tradicional Classico Caviar of Riofrìo is perfect to use as a pairing caviar. It still uses the same extraordinary quality eggs as the Organic caviar ( all the sturgeon of Riofrìo are 100% organic ), from the Acipenser naccarii, native from the Guadalquivir, the pristine river that gives its water to the Riofrìo farm.
Preparation and Pairings
We recommend this caviar for lovers of strong and matured caviars, as well as using it as a pairing, by example with our Gillardeau oysters. Some recipes ideas :
- Bluefin Tuna Tartare with Caviar ( Tuna, Caviar, Avocado, Sesame Oil )
- Scrambled eggs and Caviar ( Scrambled Eggs, Echiré Butter, Caviar ).
