White sturgeon roe is among the biggest on the market. With a diameter between 3 mm and 3.2 mm, each bite is aromatic, buttery, and smooth. The color of the caviar is dark gray to ebony with hints of amber in the right light. It has a light texture and feels compact on the tongue. The palate offers a robust fruity and nuttiness that is offset by subtle nuances of the sea. It is very easy to consume and must done so with care lest one find themselves finishing the entire jar without really savoring each complex bite.
