Code¬≠sa pro¬≠duced a lim¬≠it¬≠ed run of high-qual¬≠i¬≠ty bocarte, wild-caught in the Cantabri¬≠an Sea, each year. Their prized fil¬≠lets are pre¬≠served in award-win¬≠ning √Āgu¬≠ra EVOO.

TAST­ING NOTES FROM THE CURATOR

These large bocarte (Euro¬≠pean anchovies) are hauled straight out of the Bay of Bis¬≠cay every April and May. They are then salt¬≠ed and cel¬≠lar-cured for at least a year, and only the best fil¬≠lets are hand-packed into tins. They are intense¬≠ly fla¬≠vor¬≠ful in the savory uma¬≠mi way, and each whiff takes you straight to the sea¬≠side. Once placed in tins, they are cov¬≠ered in extra vir¬≠gin olive oil from Span¬≠ish com¬≠pa¬≠ny √Āgura.

PREPA­RA­TION OR PAIRINGS

Anchovies can tran¬≠si¬≠tion from appe¬≠tiz¬≠ers to dif¬≠fer¬≠ent kinds of sal¬≠ads and meals‚ÄČ‚ÄĒ‚ÄČif you know how to use them. A bit of anchovy in a gar¬≠lic-toma¬≠to mix atop a slice of toast¬≠ed baguette swiped with √Čchir√© But¬≠ter AOP‚ÄĒthat‚Äôs a hearty appe¬≠tiz¬≠er. Whole fil¬≠lets add big, bold fla¬≠vor to sal¬≠ads‚ÄČ‚ÄĒ‚ÄČespe¬≠cial¬≠ly those with sweet, ripe toma¬≠toes. Oth¬≠er briny foods like capers and olives are also won¬≠der¬≠ful com¬≠pan¬≠ions. Cae¬≠sar sal¬≠ads would not be com¬≠plete with¬≠out the salt-uma¬≠mi taste of anchovies and a fil¬≠let or two will boost the fla¬≠vor of any vinai¬≠grette. Anchovies also make a love¬≠ly con¬≠trast to tuna in a Ni√ßoise salad.

For over thir¬≠ty years, they have been fish¬≠ing in the Bay of Bis¬≠cay and cur¬≠ing their catch using tra¬≠di¬≠tion¬≠al, arti¬≠sanal meth¬≠ods. They have been rec¬≠og¬≠nized as one of the best Euro¬≠pean tra¬≠di¬≠tion¬≠al arti¬≠san pro¬≠duc¬≠ers since 2013.

Their part¬≠ner, aove √Āgu¬≠ra, has been fam¬≠i¬≠ly-owned for five gen¬≠er¬≠a¬≠tions in Sevil¬≠la, Spain, each fam¬≠i¬≠ly mem¬≠ber con¬≠tribut¬≠ing a dif¬≠fer¬≠ent brand of knowl¬≠edge and exper¬≠tise to the pro¬≠duc¬≠tion. Their oils have been win¬≠ning awards since 2013, the lat¬≠est being the 2019 Great Taste award.

Storage Instructions

Store your tin in a cool, dark, and dry pantry. Unopened, it will last up to 2 years. Once opened, con¬≠sume your fish with¬≠in one or two days and keep left¬≠overs‚ÄČ‚ÄĒ‚ÄČwith the oil‚ÄČ‚ÄĒ‚ÄČin a sealed con¬≠tain¬≠er in the fridge.
