Conservas de Cambados, located near the Ría de Arousa, selectively harvests only the finest baby sardines to be preserved and packed in their cannery. To them, freshness is certainly key.

TASTING NOTES FROM THE CURATOR

Small-batch harvesting allows Conservas de Cambados to be very selective with the fish they use in the cannery. Because they are situated so close to the estuary, they bring in the freshest products to be preserved and hand-packed into tins. Silver in appearance, these baby sardines are tender and mild, with the delicate flavor of the sea. Their texture is smooth and exquisitely juicy, and their flavor only increases in intensity as they are allowed to rest and mature before shipping out.

PREPARATION OR PAIRINGS

Versatile and long-lasting, these fish can be used in many ways. Have a few slices over crusty bread or crackers with a dollop of mustard and fresh ground pepper. You can also sauté the fillets with garlic, onions, and tomatoes in the traditional Galician way. Baby sardines are also delicious in salads or for filling stuffed pepper. If you fancy a glass of wine, go for a high-acid one like an Albariño, Muscadet, or Vinho Verde.

Since 1985, Conservas de Cambados has operated their cannery right where the Pontevedra River meets the Ría de Arousa. They have long been artisanal standard-setters and champions of long-terms sustainability.

Storage Instructions

Store your tin in a cool, dark, and dry pantry. Unopened, it will last up to 2 years. Once opened, consume your preserved fish within one or two days and keep left­overs with the oil in a sealed container in the fridge.
